Famous for 'torikawa', the chicken-skin skewer every Fukuoka yakitori shop serves. Neck skin is wound around the skewer in a spiral, grilled, dipped in sauce and grilled again over several days, so it ends up cracker-crisp outside and chewy within. Skewers are small, so people order ten or twenty at a time. Doors open at 17:00 and it fills fast.
