A tripe cart in business since the late 1800s, now run by Orazio Nencioni. The lunch line builds among tourists rubbing the bronze boar's snout. The roll is dunked in broth, then topped with salsa verde and chilli oil. There are no tables, so people eat on the loggia steps.
