You walk into a barber shop on Queen Street, go down a narrow staircase and pull open a fake bookcase. The bar is behind it. The menu is built like a book, each chapter pairing a family of cocktails with a member of the invented Panda family. The Birdcage is the signature: Aperol, rhubarb and lemongrass shrub, finished with cinnamon and clove smoke. There is also wine and bottled and draught beer, so non-cocktail drinkers are covered.
