A Da Nang-only chain with around ten branches; the Trần Bình Trọng shop is the flagship. Mì Quảng is Quảng Nam's noodle: wide turmeric-tinted rice noodles with only a splash of broth, topped with shrimp, free-range chicken, chopped pork ribs and soft quail eggs. Crush in peanuts and a sesame rice cracker, pile on herbs, toss and eat. Opens early, so it makes a good first meal of the day.
