A chef in ski goggles works two woks over charcoal at the front of a plain shophouse. The famous dish is a crab omelette, puffed up in hot oil until golden, that spills chunks of white crab when you cut in. It is a former street stall holding one Michelin star, and the Guide also points to the prawns in yellow curry and the noodle dishes. The catch: one omelette is 1,500 baht, roughly ten times street-food prices, and the queue can run for hours.
