Babi guling is Bali's feast dish: a whole young pig stuffed with spice paste and turned over a fire. Pak Malen is the Seminyak go-to for it. One plate piles rice with sliced meat, crackling and lawar (spiced minced meat with vegetables), with sate lilit and a pork-bone broth on the side. Portions are generous, and locals and tourists share the plain tables.
