Van Stapele bakes exactly one cookie: a crisp Valrhona dark-chocolate shell around a core of molten white chocolate. It started in 2013 in a sliver of a shop on Heisteeg, and when the queue clogged the alley it moved in spring 2024 to a much bigger building at Rokin 17. They sell out fast, so the best moment is taking one still warm from the tray. With one item on the menu, ordering takes about five seconds.
