Opened in 1996, this roujiamo shop now has branches all over Xi'an. Crisp oven-baked buns are split and stuffed with long-braised pork, chopped on the board as you watch. It has featured on TV street-food shows and draws plenty of tourists, but locals still outnumber them and lunch seats go fast. The classic order is the 'Sanqin set': roujiamo, cold rice noodles and a bottle of Bingfeng orange soda.
