A specialty roaster that opened in 2015 in Jimbocho, Tokyo's secondhand-book district. Jars of beans line the counter; the barista asks what you like, acidity, sweetness, florals, then picks a bean and brews it by hand. Almost everything is a light-roast single origin, so cups taste bright, almost like fruit tea. Named in Tabelog's Cafe Top 100 for 2025.
