It began in 1976 as a Liaoning Street stall called Li Family Shantou Beef Noodles, moved to Bade Road under its current name, and is now run by the third generation. The broth is clear and brown, made from bones, offal and vegetables rather than chili bean paste, and the shank is braised with herbs. The muddy chili oil on the table is made from fat skimmed off the offal pot; taste the broth first, then add a spoonful. Open until 3 a.m., it works after a night market.
