At the Raohe Night Market gate, look for the line. Buns are slapped onto the inside of a big urn-shaped oven and plucked out with long tongs when done. Sesame-studded crust outside; inside, peppery pork and scallion that spurt hot juice when you bite. It spent several years on Michelin's Bib Gourmand street-food list. There's also a branch on Chongqing South Road near Taipei Main Station.
