From 5:30 a.m. the queue snakes up the stairs to the second floor of Huashan Market. Near the front you can watch dough slapped onto the inside of a clay oven. The order is thick, puffy flatbread folded around egg, plus soy milk sweet or savoury; the savoury version curdles softly with vinegar, almost like tofu. Triple warns of up to an hour's wait in the morning and early closing once the batter runs out.
