Open the door and the smell of toasted shrimp gets to you first. The broth is boiled down daily from piles of sweet-shrimp heads, so the first spoonful tastes like a shrimp cracker in liquid form. You pick a flavour (salt, miso, soy), a broth strength (sonomama, hodohodo, ajiwai) and thick or thin noodles. Go sonomama for pure shrimp, ajiwai for a richer pork-bone blend. It's a walk from central Susukino, but it's open until 3 a.m.
