A restored sea captain's mansion on the quieter end of Oia, with a terrace over the caldera. The kitchen reworks Greek classics with island tomatoes, capers and white aubergine. Taramas pie, sfougato (baked courgette omelette) and lemon-butter shrimp come up often.
