In a quiet residential lane behind Shuri Castle, an old house serves lunch for two or three hours a day. The hand-made noodles are firm and springy, which makes the clear bonito-and-pork broth taste even cleaner. Toppings are plain: sweet simmered pork belly, fish cake, green onion. When the noodles run out the day is over, and on weekends that can be 12:30.
