As the sun drops, rows of white-tented stalls go up in the middle of the square and charcoal smoke drifts over the snake charmers and musicians. Every stall has a number and a priced menu. Skewers (brochettes), tagine, harira soup, fried aubergine and merguez sandwiches are standard; a few go further with sheep's head. The touts who steer you to their bench are relentless.
