Sawdust on the floor, a long counter, and carvers in aprons slicing meat, stuffing it into a roll and dunking the roll in a pan of jus. Open since 1908, Philippe's bills itself as the birthplace of the French dip. The origin story, a roll accidentally dropped in the drippings and a customer who liked it better, gets retold at nearly every table. The house hot mustard on each table clears your sinuses, and a little of it cuts right through the richness.
