A truck with a yellow awning sits in a car park by a gas station, and beside it a red-marinated pork spit, the trompo, turns in front of the flame. With each order the cook shaves meat off and flicks down a sliver of pineapple from the top onto the tortilla. At around $2 a taco you'll want three or four. It runs into the small hours, so it's a popular late-night stop.
