Forty floors up a Bishopsgate tower and open 24 hours a day, every day. The glass lift puts the City at your feet before you've sat down. The namesake dish is a waffle topped with crispy confit duck leg, a fried duck egg and mustard maple syrup. Some say you're paying for the view, but eating at this height at 3 am is the whole point.
