At sunset a row of charcoal grills lights up on the waterfront by the Filipino Market. Pick fish, squid, prawns or clams off the ice and they're brushed with sambal and grilled on the spot, while neighbouring stalls sell chicken wings, satay and tropical fruit. Plastic stools, smoke in your hair: that is the whole appeal. Rougher than a restaurant, cheaper and louder too.
