Climb the narrow stairs by the Spice Bazaar gate and you're in a room tiled blue from floor to ceiling. Pandeli Çobanoğlu opened it in 1901; the official site lists Atatürk, Elizabeth II and Audrey Hepburn among past guests, and Hepburn's black-and-white photo hangs inside. It closed for the bazaar's restoration, has since reopened, and holds a 2026 Michelin Bib Gourmand. Order Pandeli's aubergine börek topped with a slice of döner, or sea bass baked in paper.
