Tsim Sha Tsui Star Ferry Pier (by the Clock Tower) to Central Pier 7

Low green-and-white boats shuttle between Tsim Sha Tsui and Central in under ten minutes. The wooden benches still have flip-over backs so you can face either way, and every swell brings a gust of salt air through the open sides. It costs a few Hong Kong dollars, and both skylines slide past the windows. Ride it just after sunset and it's a harbour cruise in all but name.
