A lane lined with burners, crêpes going non-stop. The turmeric-yellow batter puffs out wider than the plate, packed with shrimp, pork, bean sprouts and mung beans. Cut a piece, wrap it in lettuce and herbs, dip it in nước chấm, and it stays crisp to the last bite. There's an air-conditioned room, but even Michelin says the real experience is outside by the open kitchen. The menu is thick, so you can add grilled meat or seafood. Bib Gourmand 2026.
