In 1946, with fresh milk scarce, Sofitel Metropole bartender Nguyễn Văn Giảng whipped egg yolk with sugar and condensed milk and floated it on coffee. Walk down a narrow passage and up the stairs to a room crammed with low stools and tiny tables. The cup arrives sitting in a bowl of hot water; spoon off the cream, then stir it into the coffee and it tastes close to tiramisu. Almost everyone says the feared eggy smell never shows up.
