Inside Holyrood Park behind the palace; most people start from the car park near the palace

Right next to the city centre sits a whole extinct volcano, 251 metres high, turned into parkland. Thirty minutes to an hour up grassy paths and rocky steps gets you to the summit rocks, with the castle, Old Town rooftops, the Firth of Forth and the bridges in one sweep. The red cliffs of Salisbury Crags on the way up are a viewpoint in their own right. The top is always windy; watching someone chase their hat is part of the experience.
