At 6:30 pm a small cart lights up against a temple wall, and people write orders on slips and spike them on a stick. The dough has no egg and is fried slowly in coconut oil, so it's crisp outside and chewy within. It's on the MICHELIN 2026 Bib Gourmand list; after the condensed-milk classic, the Guide recommends egg and fresh banana. There are about twenty toppings, but regulars settle on banana, egg and Nutella.
