Lechon in the Philippines isn't only whole pig. Andok's is the chain famous for lechon manok: lemongrass-stuffed chicken turned over charcoal until the skin goes salty and the meat stays juicy. Dip it in the soy-vinegar sauce, add rice, done. There's charcoal-grilled pork belly (liempo) too. With around five outlets on the island, one is always close.
