This Siji Minfu branch sits just across the Forbidden City's east moat. Ducks go into the oven when you order, and a chef in a white toque carves skin and meat separately at a side station. Dip the skin in sugar, top the meat with minced garlic, or roll it in a pancake with scallion and cucumber. It costs a little less than Quanjude and gets consistently good reviews, so it is named more often than anywhere else for Peking duck. The catch: weekend dinner queues run to hours.
