Quanjude opened at Qianmen in 1864 and became the name for Peking duck. Ducks hang in a fruitwood-fired oven (the gualu method), a technique listed as national intangible heritage in 2008. The Qianmen Street store is a huge hall of round tables, full of families and groups. A chef carves at your table and fans the first slices into a flower. Reviews split between richer and more indulgent than Siji Minfu, and ordinary for the price.
