This stall has been cooking congee on Charoen Krung Road for over six decades; it used to sit behind the Prince Hotel, hence the name (per the Michelin Guide). Rice is simmered over charcoal until it breaks down completely, leaving a silky texture and a faint toasted, smoky note. Pork meatballs go in, then shredded ginger, spring onion and coriander, plus an egg if you like. A regular on the Michelin Bib Gourmand list, it draws a line every morning.
