On the 17th floor of the Palais de Chine Hotel, this Cantonese room has held three Michelin stars since the first Taiwan guide. Cherry Valley ducks from Yilan come out as crispy-skin Cantonese roast duck and as Peking duck served four ways. The duck must be ordered ahead. Lunch dim sum is the easier table to get.
