A gua bao counter tucked into the lanes of Gongguan's student night market. A soft white steamed bun is split and stuffed with soy-braised pork belly, ground peanut, coriander and pickled mustard greens. The twist Michelin noted: you choose how fatty the pork is. Go mixed first time, or ask for lean if you shy from fat. It made Michelin's 2019 Bib Gourmand street-food list.
