Katong laksa: an orange coconut broth heavy with dried-shrimp aroma, the noodles cut short so you eat it with nothing but a spoon. Prawns, cockles, fishcake and fried tofu go on top, and the regular move is a side of otah, spiced fish paste grilled in a banana leaf. It became famous for beating Gordon Ramsay in a 2013 TV cook-off. Most people pair it with a morning stroll past Katong's pastel shophouses.
