Imun Seolnongtang is a Jongno soup house recorded as Seoul’s first officially registered restaurant. Beef leg bones simmer for 17 hours in a large cast-iron pot, then the fat is skimmed for a clean, milky broth. Thin sliced suyuk and seasoned suyuk are the named companions for a drink.
