A Sindang-dong pork house behind white tiles and a gold pig sign. Pork belly and neck, cut two knuckles thick, go onto a cast-iron plate over coal briquettes; the fat runs off and the edges turn crisp while staff do all the grilling for you. It is a regular on the MICHELIN Bib Gourmand list in Seoul, so even on weekday evenings the queue numbers climb into the thirties. Finish with the pork kimchi stew and a pack of ramyeon noodles dropped in.
