Off the tourist track in residential Chamberí. Two brothers run it, and the name honours Gabino, the cook at La Ancha, the restaurant their grandfather opened in the 1930s. Potato tortilla is the flag: set outside, almost runny inside, Madrid-style. Michelin singles out the classic Velazqueña and the truffled Trufada. It's on the Madrid tourist board's 2026 Bib Gourmand list.
