If you want one plate that explains Guam food, start here. The draw is Chamorro barbecue: short ribs and chicken marinated in soy and vinegar, grilled over charcoal, with achiote-tinted red rice on the side. The sweet-salty short ribs are the favourite, and some report they sell out early. Evening waits of 30+ minutes are common, so go at lunch opening or book. There's a second branch in Hagåtña, handy on a Chamorro Village day.
