Fukuoka udon is soft, in a clear kelp-and-sardine broth. This shop crowns it with 'gobo-ten', burdock sliced thin and fried into a fan so wide it hangs over the rim. Noodles are boiled and tempura fried to order, so there's a short wait, but crisp burdock half-soaked in broth is the whole reason to come. It's in a basement right by Hakata Station, handy before a train.
